Italian Macaroni Casserole
I tried Rummo macaroni right away in one of my everyday favorites. It looks like a traditional Finnish macaroni casserole, but it’s definitely not just that. Something familiar, yes — but just a little bit better. It’s an Italian macaroni casserole. The tomato-based version has far more flavor. Rosemary, chili, and balsamic vinegar give the sauce a kick, balanced by creamy mascarpone. Instead of dry breadcrumbs, I used stretchy mozzarella. And the Rummo macaroni, made from durum wheat with the slow Lenta Lavorazione method, stayed perfectly firm even after baking in the oven.
